Dan Russell joined The Swan in April this year to head up the new kitchen team. He has been a professional chef for over ten years. After his college training, he worked as a pastry chef for 18 months at the Ritz, London, where he was able to perfect all aspects of the Afternoon Tea repertoire. Daniel is now going to bring this repertoire to The Swan with a range of classical and modern afternoon tea cakes and pastries. His combination of classical, modern and European influences create enduring flavours which are sure to delight any palette.

Supporting is Mark, Suffolk Country Inns' Executive Head Chef, is delighted to be back at the Swan, rejoining friends and regulars in this historic pub as he gets to work in the kitchen producing the classic dishes for which he is famous.  Just down the road from his home in Lavenham, the pub has the perfect position on the village green and is surrounded by an abundance of farming and countryside, providing a rich wealth of producers - and a lovely journey to work!
