Mark, Suffolk Country Inns' Executive Head Chef, is delighted to be back at the Swan, rejoining friends and regulars in this historic pub as he gets to work in the kitchen producing the classic dishes for which he is famous.  Just down the road from his home in Lavenham, the pub has the perfect position on the village green and is surrounded by an abundance of farming and countryside, providing a rich wealth of producers - and a lovely journey to work!  Mark is joined in the kitchen by Troy Trenwick whose Yorkshire puddings and desserts are the stuff of legends!

Leading the front of house team, Isaias Fuentes is a veteran of the hospitality industry and is looking forward to a cosy winter at the Swan with open fires in the thatched, chocolate box pub.  From Spain, he has a passion for fine food, meat and wine, and uses his depth of knowledge to ensure our customers enjoy their meals to the fullest.
